There are two possible baptism records for William Ching: 1) son of Humphrey and Katherine, 1653, and 2) son of William and Jone, 1664 - both at Kilkhampton. There are then no further baptisms of William Chings until 1780.

Which baptism is correct, is not entirely clear, and depends on whether there was one William Ching marrying three times in the 1660s and 1670s at Kilkhampton, or 2/3 William Chings. There are the following marriages:
William Ching and Susanna Judd, 1677
William Ching and Elizabeth Hockridge, 1693
William Ching and Honour Greenway, 1707

Evidence in favour of one William includes:
The wives all die just before the next marriage
There is no repetition of children's names, except Charles (1700 to marriage 2, and 1713 to marriage 3). However, there is a burial record for a Charles, son of William in 1711 - before the next son Charles
If we assume the first marriage is William born 1653, and the second is William born 1664 (which aligns closely with wives' dates of birth), then the first William's father would be Humphrey. The first William has a son named Humphrey. The second William would be a son of William. There is no child called WIlliam.

Evidence against:
There are two baptisms - these baptisms align closely to baptism dates of wives 1 and 2. The simplest solution would therefore be to assign a WIlliam to each of the first two wives. With the third wife being a second wife of the second William (this would still explain the Charles point.
If the first William married all three, he was still having children at 65 - unlikely, though not impossible.
